Learn how to make perfect chicken wings in the air fryer with TV star Big Zuu’s easy recipe. Serve the crispy wings with a spicy jerk sauce, chives and crunchy celery for an incredible chicken dinner that’s ready in just 30 minutes.

  • Top tip: For extra crispy wings, spray some oil over them after you’ve turned them over halfway through cooking
  • Know-how: Chicken wings are often divided into 3 pieces to get them extra crispy. Use a sharp, heavy knife to cut off the small wing tip through the joint. They don’t have much meat on them – keep them for a stock. Cut through the other joint to create a drumette and a flat.

Ingredients

  • 4 wings, divided into drumettes and flats (see Know-how)
  • 1 tbsp all-purpose seasoning
  • 1 tbsp plain flour
  • Spray on oil to coat (optional – see intro)
  • 110g tomato ketchup
  • 10g clear honey
  • 90g pineapple juice
  • 1 tbsp jerk paste
  • 1 tbsp jerk spice blend
  • 1 tbsp Worcestershire sauce
  • Chives, chopped, to serve (optional)
  • Celery to serve (optional)

Method

  1. Pat the wings dry to remove any moisture, then put in a mixing bowl. Add the all-purpose seasoning, flour and a pinch of salt. Toss together to ensure the wings are evenly coated.
  2. Heat the air fryer to 180°C. Put the wings skin-side down in the air fryer basket, ensuring there’s some space between them. Air fry for 20 minutes, turning over half way through (see intro).
  3. While they cook, make the jerk sauce. Put the ketchup, honey, pineapple juice, jerk paste, jerk spice blend, Worcestershire sauce and a pinch of salt in a saucepan over a medium-high heat. Once bubbling, lower the temperature to medium heat and simmer for about 10 minutes until thickened a little.

  5. Tip the sauce into a bowl, add the cooked wings fresh from the air fryer and toss. Serve with some chives scattered over, plus celery sticks on the side, if you like.
