This turkey kofta recipe with a refreshing apple salad is perfect for a midweek meal with friends.

Ingredients

  • 500g free-range turkey mince
  • 25g fresh white breadcrumbs
  • 2 garlic cloves, crushed
  • 2 tsp English mustard powder
  • ½ tsp cayenne pepper
  • 2 tbsp Worcestershire sauce
  • 2 tsp tomato purée
  • 2 tsp brown sugar
  • 1 tsp cider vinegar
  • 1 tbsp olive oil

For the apple salad

  • 2 little gem lettuces
  • 1 green apple, finely sliced
  • 4 spring onions, finely sliced
  • Juice of ½ lemon
  • 3-4 tbsp extra-virgin olive oil

Method

  1. Soak 8 wooden skewers in warm water. Put the kofta ingredients, apart from the oil, in a large bowl and season well. Mix with your hands until well combined.
  2. Form the mixture around the skewers to make 8 koftas, then cover and chill for 10 minutes.
  3. Meanwhile separate the little gems into leaves and mix with the apple and spring onions in a serving bowl. Whisk the lemon juice with salt, pepper and a pinch of sugar, then whisk in the extra-virgin olive oil in a steady stream until you have a thick vinaigrette. Pour it over the salad and toss well to coat.
  4. To cook the koftas, heat the 1 tbsp olive oil in a large pan over a medium heat and cook the skewers for 15-20 minutes, turning regularly, until browned and cooked through. Serve with the salad.
