Ingredients

  • 3 tbsp mascarpone
  • 100ml double cream
  • 1 tbsp stem ginger syrup
  • 3 ginger biscuits
  • 1-2 tbsp lemon curd

Method

  1. Whisk 3 tbsp mascarpone, 100ml double cream and 1 tbsp stem ginger syrup until just thickened and spoonable.
  2. Roughly break up 3 ginger biscuits and divide most of the crumbs between 2 short tumblers.
  3. Spoon over the mascarpone/cream mixture, then top each with 1-2 tbsp lemon curd. Sprinkle with the remaining ginger biscuit crumbs and serve.

  1. Make the mascarpone, mixture, then cover and chill for up to 4 hours. Finish the recipe, then serve.
