Ingredients

3 tbsp mascarpone
100ml double cream
1 tbsp stem ginger syrup
3 ginger biscuits
1-2 tbsp lemon curd

Method

Whisk 3 tbsp mascarpone, 100ml double cream and 1 tbsp stem ginger syrup until just thickened and spoonable.
Roughly break up 3 ginger biscuits and divide most of the crumbs between 2 short tumblers.
Spoon over the mascarpone/cream mixture, then top each with 1-2 tbsp lemon curd. Sprinkle with the remaining ginger biscuit crumbs and serve.
