Limey guacamole. Mash the flesh of 1 ripe avocado with the juice of ½ lime, a small handful of chopped fresh coriander and 1 tbsp natural yogurt. Season well, then serve with corn chips or sourdough toast.
Gin, elderflower and lime cocktail. Crush fresh mint in a tall glass, then squeeze in the juice of ½lime. Add crushed ice, then pour in 25ml gin, 15ml elderflower cordial and top with soda water.
