All-in-one baked lemon and rosemary chicken recipe

This super-simple one-pot chicken recipe requires almost no preparation and is ready in less than an hour.

All-in-one baked lemon and rosemary chicken

Ingredients

  1. 8 chicken portions (use legs, thighs and breasts) 500g new potatoes, halved lengthways
  2. 2 lemons, cut into wedges
  3. 4 fresh rosemary sprigs
  4. A glass of white wine
  5. 4 tbsp olive oil

Method

  1. 1. Put the chicken portions into a roasting tin with the new potatoes, lemons, fresh rosemary sprigs, white wine, olive oil and season well.
  2. 2. Bake, uncovered in a preheated oven at 180°C/fan160°C/gas 4 for 40-50 minutes, until tender and golden.

Wine Recommendation

A classic wine such as white Burgundy would be perfect.
