Baked sweet potatoes recipe

Serve these gorgeous alternative jackets with the braised lamb shanks.

Baked sweet potatoes

Ingredients

  1. 4 medium sweet potatoes, scrubbed
  2. 4 tsp olive oil
  3. 4 tbsp mascarpone or crème fraîche
  4. 4 tbsp chopped fresh chives

Method

  1. 1. Preheat the oven to 160°C/fan140°C/gas 3. Rub the sweet potatoes with the olive oil and place each on a large piece of kitchen foil. Sprinkle with sea salt, wrap tightly and bake for 21/2 hours, until tender.
  2. 2. Unwrap the foil, cut a cross in the top of each potato and gently squeeze the potatoes from the base. Fill with a dollop of mascarpone or crème fraîche, season with black pepper and sprinkle with chives. Serve with the braised lamb shanks.
