You can cook with lettuce? You can in this scrummy recipe for braised peas with leeks, little gem lettuces and mint that's ideal for vegetarians.
Ingredients
- 3 little gems or 5 little gem hearts
- 75g butter
- 2 small (about 150g) leeks, trimmed, washed and thinly sliced
- 750g frozen or freshly shelled peas
- 1 tbsp chopped fresh mint leaves
Method
- 1. Trim the lettuces and cut each lettuce lengthways into 6 wedges.
- 2. Melt half the butter in a deep sauté pan over a medium-low heat. Add the leeks and sauté gently for 2 minutes or until softened. Add the lettuces and cook for 1-2 minutes or until they begin to wilt. Add the peas and 100ml water. Season. Simmer for
- 3-4 minutes, stirring, until the peas are softened and about half the liquid has evaporated.
- 3. Dot over the remaining butter, sprinkle with the mint and shake the pan briefly. Serve hot with the lamb.
