Fattoush salad recipe

This delicious bread salad is herby and fresh. Serve with spicy Lebanese lamb tart.

Fattoush salad

Ingredients

  1. 3 pitta breads, toasted and torn into bite-size pieces
  2. 1 romaine lettuce, leaves torn
  3. 6 spring onions, sliced
  4. 1 cucumber, halved lengthways and sliced at an angle
  5. 10 radishes, thinly sliced
  6. Small bunch of fresh flatleaf parsley, finely chopped
  7. Small bunch of fresh coriander, finely chopped
  8. Small bunch of fresh mint, finely chopped

For the dressing

  1. Juice of 1 lemon
  2. 4 tbsp olive oil
  3. 2 garlic cloves, crushed
  4. 2 tsp sumac (available at Middle Eastern shops, Waitrose and online at steenbergs.co.uk)

Method

  1. 1. Place all the salad ingredients into a large bowl and mix together well. Mix together the dressing ingredients, pour over the salad and toss again so everything is well coated, then serve.
