This is an ideal butter to serve with lamb, chicken and fish.

Olive, garlic and thyme butter

Ingredients

  1. 125g soft butter
  2. 60g Kalamata olives, stoned,
  3. 1 garlic clove, chopped,
  4. the leaves from a few fresh thyme sprigs,

Method

  1. Mix 125g soft butter in a food processor with 60g Kalamata olives, stoned, 1 garlic clove, chopped, and the leaves from a few fresh thyme sprigs, until almost smooth. Wrap in foil, shape into a log and chill until firm.
