Beetroot, new potato and chive salad

A great take on a traditional potato salad that includes baby beetroot, a mustard dressing and pumpkin seeds.

Ingredients

  • 500g new potatoes
  • 3 tbsp olive oil
  • ½ tsp Dijon mustard
  • 1 tbsp chopped fresh chives
  • 8 cooked baby beetroot, quartered
  • ½ red onion, sliced
  • 1 tbsp pumpkin seeds

Method

  1. Cook the new potatoes, halved, in a pan of boiling water until tender.
  2. Drain and mix with a dressing made of olive oil, Dijon mustard and chopped fresh chives. Season. Cool slightly, then add baby beetroot, red onion and pumpkin seeds. Serve.
