How to use up leftover fennel seeds

  • Fennel tea
    Bruise 2 tbsp fennel seeds in a pestle and mortar, then put in a teapot. Boil the kettle then, after 5 minutes, pour the water into the teapot. Leave to steep for 5 minutes, then pour through a strainer into cups. It’s said to be good for digestion.
  • Fennel-crusted pork
    Heat the oven to 200°C/180°C fan/gas 6. Toast 2 tbsp fennel seeds in a dry frying pan until they smell fragrant. In a small bowl, mix the toasted fennel seeds with 2 tbsp olive oil and a crushed garlic clove. Coat 2 pork chops in the mixture, then fry for a few minutes on both sides until browned. Transfer the chops to a baking tray and cook for 10-15 minutes until cooked through.
