TV star Big Zuu shares his recipe for incredible plantain cheese burgers. Think juicy beef burgers topped with crisp beef bacon and fudgy, golden plantain – all cooked in just 10 minutes in the air fryer.
- Quick and easy: Fancy a burger fix in a hurry? These cheeseburgers only need 10 minutes in the air fryer. The beef bacon, burger patties and plantain all cook at the same time.
- Top tip: You could also toast the burger buns in the air fryer – spread some butter on the cut sides and cook them for a minute or two until golden.
- Source the ingredients: Beef bacon is cured, smoked beef belly and can be enjoyed by those who don’t eat pork. It’s a bit tougher than regular bacon but has a rich, beefy taste. You can get it from specialist sellers such as The Dorset Meat Company and Tomhixon.co.uk as well as some halal butchers. You can get plantains – which look like large bananas – from good greengrocers and many large supermarkets.

Ingredients
- 500g beef mince (20% fat)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp fine salt
- ½ tsp freshly ground black pepper
- 8 rashers beef bacon (optional)
- 1 ripe plantain, cut into diagonal slices
- 2 tsp olive or sunflower oil
- 4 slices American cheese
- 4 lettuce leaves
- 1 beef tomato, sliced
- 4 brioche buns
For the burger sauce
- 1 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tsp American yellow mustard
- 1 gherkin, finely chopped

Method
- Combine the beef mince, onion powder, garlic powder, salt and pepper in a large bowl. Divide the mixture into 4 portions and roughly shape into burger patties.
- Heat the air fryer to 180°C and add the patties, ensuring there’s space between each (you may need to cook them in batches). Put the strips of beef bacon (if using) and the plantain, coated in a little oil, in the space between the patties.
- Cook in the air fryer for 8 minutes, adding the cheese slices to the top of each burger patty after 6 minutes. Meanwhile, make the burger sauce by combining all the ingredients in a small bowl.
- To assemble the burger, put a lettuce leaf, tomato slice and a cheese-covered burger patty on the bottom half of each bun. Sit the beef bacon and plantain on top. Spread the cut side of the top bun with the burger sauce, then use it to finish your burger. Enjoy.
