Air fryer lamb kofte wrap

When that Friday night takeaway craving comes calling, turn to your air fryer instead. The result? A tasty, speedy lamb kofte wrap that’s packed with colour and flavour.

  • Why it’s so good: These filling lamb kofte wraps are packed with spiced lamb kofte, crunchy peppers and onions, diced potatoes, fresh herbs and yogurt, all encased in a pillowy flatbread.
  • Air fryer winner: Air fryers are great at cooking meat when you want a caramelised outside and a juicy centre – making them perfect for kofte. Frying them over a bed of  potatoes and peppers means none of that wonderful spiced lamb fat goes to waste, creating a fabulous filling for a wrap with some crunchy onions for freshness.

Ingredients

  • ½ red onion, roughly chopped
  • 4 garlic cloves, roughly chopped
  • ½ bunch (15g) flatleaf parsley, roughly chopped
  • 2 tbsp shawarma spice mix
  • 1 tbsp rose harissa paste (optional)
  • 500g lamb mince, 20% fat
  • 1 large floury potato (such as maris piper), peeled and cut into 1cm cubes
  • 1 pointed (romano) red pepper, cut into 1cm cubes
  • 1 tbsp olive oil

To serve

  • 4 flatbreads
  • 4 tbsp greek yogurt
  • ½ red onion, finely sliced
  • ½ bunch (15g) parsley, chopped
  • 1 tsp sumac
  • 4 tsp pomegranate molasses or hot sauce (or both)
  • Juice 1 lemon

Method

  1. Add the onion, garlic, parsley, spice mix and harissa (if using) to a food processor with a big pinch of salt. Whizz to a coarse paste, then add the lamb and whizz again until combined. You really want to break down the mince as much as possible, into more of a paste-like consistency, so don’t worry about overworking it.
  2. Rinse the cubed potatoes in cold water to remove excess starch (this will help turn them more crisp). Drain, pat dry, then put in a bowl with the cubed pepper. Toss in the olive oil to coat.
  3. Heat the air fryer to 190°C. Shape the lamb mixture into a rectangle, using the air fryer basket as a guide – you want your rectangle to be slightly smaller. Use a knife to cut the rectangle lengthways into 4 longer, thinner rectangles.

  5. Put the potato mixture in the bottom of your air fryer, then the kofte in the basket that will sit above them. Cook for 20 minutes, turning the kofte and stirring the potatoes halfway.
  6. To serve, warm the flatbreads for 30 seconds in the microwave or your air fryer, then spread with the yogurt. Mix the onion, parsley and sumac together with a pinch of salt. Divide the potato mixture and koftes among the flatbreads, then top with the onion salad. Drizzle with pomegranate molasses and/or hot sauce, squeeze over some lemon juice, then roll up and slice however you like.
