WHAT THEY DO
Flock and Herd are a small butchery based in Peckham, southeast London, that combines traditional methods with modern butchery techniques to create the ultimate customer experience.
The young team are passionate about encouraging innovation in the trade while maintaining key values. Animal husbandry and welfare is of utmost importance. Over the past four years, the team have cultivated close relationships with a number of farmers in the Home Counties, paying regular visits to the farms. Many of the heritage or rare breeds Flock and Herd are proud to stock are reared using traditional free-range farming techniques.
Flock and Herd butcher whole free-range Old Spot pigs from Essex and Suffolk on-site, producing a number of items including porchetta, bacon, and gammon knuckles alongside their butchers’ sausages. Just like back in the day, nothing is wasted, and the team say this practice is the secret behind their “beautiful gluten-free sausages made with skill and love”.

The judges commented that Flock and Herd’s commitment to not wasting anything through the use of proper butchery skills is important and deserves to be supported, concluding that it is “great to see a new generation of committed butchers coming to the high street".
