Curry powder is a phenomenon that has spread to every corner of the globe. Tom Norrington-Davies’s curry powder recipe is a great all rounder.


  • 4 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • ¼ tsp fenugreek seeds
  • 2 cloves
  • Seeds of 6 cardamom pods
  • ¼ tsp ground nutmeg
  • 1 tbsp turmeric powder
  • 1 tsp cayenne pepper (halve this for a milder taste)
  • 1 tsp ground cinnamon


  1. Grind or pound the whole spices in a pestle and mortar, a mini processor or electric spice grinder, and add them to the powdered ones. To preserve the flavours, keep the mix in an airtight container until you need to use it.
