Rosie’s easy spring feast menu
Asparagus and egg mayo toasts
Egg mayonnaise is a favourite of mine and makes a luxurious starter. Here, with the asparagus in a lemony, herby dressing, it becomes an elegant toast topper, perfect for dinner parties.
Nidi di tagliatelle al forno (baked pasta nests)
This is a kind of easy, alternative lasagne – nests of tagliatelle are baked in a saucy blonde ragù and bechamel, topped with cheese and prosciutto. The result is a comforting yet impressive main that everyone will love – perfect for an Easter table. Great with bread and a crisp green salad.
Rice pudding brûlée with caramel bananas
Rice pudding is a treat and this one is lusciously silky with the added bonus of a brûléed crust to break through. Topped with caramelised bananas it’s basically chic nursery grub, aka my favourite kind of food.
How to prepare ahead
I believe you should be doing minimal cooking while your guests are in your home. Restaurant chefs prep or cook nearly everything before service to make things easier, and so should you. Here’s a plan so you can prep ahead and have a good time with your guests.
