Celebrity chef Lisa Faulkner reveals the food memories that take her back to her mum’s kitchen and the importance of passing on recipes to her daughter Billie.

Lisa’s first magic food memory…

My earliest memory of food would have to be when my mum was making pastry from scratch with her glass rolling pin in the kitchen. I could hear her wedding rings clink against the glass as she rolled. Mum always cooked pastry from scratch.

The first recipe Lisa learned to cook

It was pastry – and also drop scones on a griddle. I still love making them; they are nostalgic for me, as my mum taught me to cook them. I’ve passed the recipe on to my daughter Billie – I’ve made sure she knows how to cook, particularly the basics – she wouldn’t leave the house if she didn’t! My sister Victoria is the same – cooking is embedded in our family life; we love it.

The one recipe Lisa can’t live without

I have to have at least one roast dinner a week. My family love it too. Oh, and also John Torode’s beef rendang with lemongrass and ginger Thai herb salad recipe with sticky rice – yum!

The recipe that means most to Lisa right now…

I can’t pick just one – I’d have to say it’s the many recipes I helped create for the Sky Kids Café, a TV-themed play and café experience to celebrate the launch of the new Sky Kids app. The experience bought to life three TV worlds – Scooby-Doo, Ben & Holly and SpongeBob SquarePants – and I curated a themed food and drink menu inspired by each show. The menu includes tasty bites such as Scooby-Dogs (hot dogs) sleeping snails (sun-dried tomato and parmesan buns) and Mr Krab’s Fish Fingers with sweet potato chips and lemon mayo. I loved being involved in the campaign as it’s a passion of mine to help parents learn how they can encourage their children to eat healthily and create balanced, nutritious meals at home.

It’s the spiced courgettes with curried yoghurt – so simple yet tasty. I make a version of this at home to accompany dishes and the family love it.
