How to use up leftover gin

  • G&T lollies
    Put 50g caster sugar in a small pan with 50ml water. Gently heat until the sugar dissolves, then set aside to cool. Mix 700ml tonic with 200ml gin and the cooled sugar syrup, then pour into 10 x 100ml ice lolly moulds. Put a thin slice of cucumber into each, then freeze until solid.
  • Spiked pasta sauce
    Fry 1 finely chopped onion and 2 crushed garlic cloves in olive oil until soft. Add 1 tbsp tomato purée and cook for 1 minute. Add 2 tins plum tomatoes, stir to break up, then cook until reduced by a third. Add 60ml gin and cook for 5 minutes. Stir in 3 tbsp double cream, then season and serve with penne.
