Feta, watermelon and green bean seedy salad recipe

Cheese and fruit are a classic combination. This is a great salad recipe for an easy summer dinner.

Feta, watermelon and green bean seedy salad

Ingredients

  1. 200g fine green beans, topped
  2. ½ ripe watermelon, deseeded
  3. 4 tbsp seeds (such as sunflower or pumpkin)
  4. Small bunch of fresh chervil (or greek basil), roughly chopped
  5. 200g pack feta
  6. Extra-virgin olive oil for drizzling
  7. Juice of 1 lime

Method

  1. 1. Blanch the green beans in boiling water for 2 minutes, then refresh quickly under cold water.
  2. Chop the watermelon into bite-size chunks, then put into a large serving bowl. Toss through the blanched beans, seeds of your choice and fresh chervil or greek basil.
  3. 2. Crumble over the feta, drizzle over a little oil, then squeeze over the lime. Serve with a glass of crisp, chilled white wine.
