Such an easy sauce to make, such a devastatingly effective side order to serve.

Mint sauce for lamb

Ingredients

  1. A bunch of fresh mint
  2. 2 tsp caster sugar
  3. 2 tbsp red wine vinegar

Method

  1. 1. Pick and finely chop the leaves of a bunch of fresh mint. Place in a small bowl and stir in 2 tsp caster sugar. Pour over 75ml boiling water, stir to dissolve the sugar, then add 2 tbsp red wine vinegar. Leave to cool and infuse.

Chef's tip

Try adding finely chopped red chilli for a hint of spice, or 1 tbsp redcurrant jelly instead of the sugar.
