Snowball cookies recipe

These easy cookies really are something special – they melt in the mouth and are great fun to make.

Ingredients

  1. 100g butter, softened
  2. 150g icing sugar
  3. 150g plain flour
  4. 25g chopped walnuts
  5. 25g chopped almonds
  6. Grated zest of 1 lemon

Method

  1. 1. Preheat the oven to 180°C/fan160°C/gas 4. Cream the butter and 75g of the icing sugar until soft and fluffy. Stir in the flour. Add the nuts, a good pinch of salt and zest and mix until it forms a dough. Knead lightly. Cover in cling film and refrigerate for 30 minutes.
  2. 2. Roll into walnut-sized balls and bake on a lightly greased baking sheet for 10-12 minutes. Tip into a large bowl containing the rest of the icing sugar and toss to coat.
  3. 3. To give as a gift, pile into a large jar with a screw top and decorate with ribbon.

Chef's tip

Keeps in an airtight container for 1 week.

I have made these following the recipe above and they have come out ok. I only made 16 - I think I was too generous when considering the walnut size comment! I left mine to chill in the fridge for 45 mins before cooking. They have come out more like a slightly flat-ish cookie than shown in the picture above. They taste delicious though!!! Hope my friends like them for Xmas!!!

Has anyone else had the same problem? Mine were also a melted mess and I left them in the fridge for an hour after reading the previus post. Is it really 100g of butter?!

Sorry to hear you didn't enjoy this recipe. All delicious recipes are thoroughly tested and don't get published unless they work. It's important to ensure you have refrigerated the mixture for 30 minutes and that the oven is at the right temperature.

These didn't work at all. They looked promising until they went in the oven--then they just collapsed into a buttery mess.
