  • 2 eggs
  • 4tbsp skimmed milk
  • Chives, chopped, to taste
  • 1 large flat mushroom
  • 1tbsp olive oil
  • 1 slice wholemeal bread, toasted, to serve

Method

  1. Beat the eggs and milk together with some freshly ground black pepper and chopped chives to taste. Scramble on the hob or in the microwave.
  2. Brush the mushroom with olive oil and grill for 5 min or until softened. Pile the eggs on top of the toast, add the mushroom and serve.
