All the recipes have 10 (or fewer) ingredients and take no more than 45 minutes; just what you need for a simple and quick dinner on a Monday night.
Halloumi with a warm harissa rice salad
A 15 minute throw-it-all-together type meal using a pouch of cooked rice, harissa spice mix, a tin of chickpeas and fresh parsley. We’ll leave it to you to decide how much halloumi you top the salad with… we won’t judge.
Cauliflower cheese pasta bake
Made with cheddar AND feta cheese, this is a great combination of a traditional cauliflower cheese and a pasta bake.
Sweetcorn chowder
Frozen sweetcorn is the star of this smoky soup recipe. It takes just 20 minutes to make and you’ll probably have most of the ingredients at home already.

Chetna Makan’s vegetarian curry recipe, with spinach and paneer, is made with just a few ingredients and is very quick to make.
Spicy baked eggs

Courgette frittata
Fresh mint, chilli and feta turn this everyday vegetable into something spectacular. This frittata recipe is great for dinner and keeps well, in the fridge, for lunch the next day.
Sweet potato and cheese quesadillas
Simply stuff flour tortillas with a sweet potato, pea, sweetcorn and cheese filling, griddle in a frying pan, then dip into the zesty avocado dip.
Linguine with chickpeas, lemon and samphire
A budget recipe using mostly store-cupboard ingredients; this 20 minute pasta recipe – with lemon, garlic, parsley and chilli – is packed full of flavour and will fill you up too.
Cheesy mushroom gnocchi bake
Shop-bought gnocchi, a balsamic tomato sauce and garlic and sage mushrooms are topped with a blanket of cheddar and mozzarella cheese. Bake for 25 minutes for easy comfort food on a weeknight.
Miso aubergine burger
Slices of aubergine are marinated in a miso, maple syrup and soy sauce before being baked to gooey perfection. Stuff inside burger buns with mayo, sriracha and griddled onions for an umami-rich meal that just so happens to be vegan, too.
