Chipotle chilli old fashioned

The sweet smokiness of bourbon makes it an obvious pairing for a chipotle. The smoked Mexican chilli adds a pleasing kick to each sip in this delicious twist on a classic old fashioned.
Ingredients
- 100g light brown sugar
- 1 tsp chipotle chilli flakes (from Tesco and Sainsbury’s or online)
- 2 rosemary sprigs
- 50ml bourbon
- 3 dashes angostura bitters
- Large strip orange peel
Method
- Begin by making a chipotle and rosemary-infused sugar syrup. Put the sugar, chilli flakes, 1 rosemary sprig and 100ml water in a small pan, simmer for 10 minutes, then strain and leave the syrup to cool.
- Add the bourbon and bitters to a tumbler filled with ice, then add 1 tsp of the cooled chipotle sugar syrup and mix with a spoon or stirrer for 1 minute. This not only chills the drink but slightly dilutes it. Twist the orange peel over the drink to release some of its aromatic oil, then use it to garnish the cocktail along with the remaining rosemary sprig. Set the rosemary sprig alight, then blow it out – the fragrant smoke adds a bit of theatre and amplifies the smoky flavours.
