Ingredients

  • 1 onion, halved
  • 6 cloves
  • 600ml whole milk
  • 5 black peppercorns
  • 2 bay leaves
  • 125g fresh white breadcrumbs
  • Knob of butter
  • Grated fresh nutmeg to taste

Method

  1. Stud the onion halves with the cloves and place in a medium saucepan with the milk, peppercorns and bay leaves. Bring to the boil, turn down the heat, then simmer gently for 5 minutes.
  2. Remove from the heat, then leave to infuse for an hour or so. Strain and discard the solids.
  3. Pour the infused milk back into the pan, beat in the breadcrumbs and half the butter and simmer gently for 5 minutes to thicken. Just before serving, beat in the rest of the butter, season, and grate in nutmeg to taste. Spoon into a bowl and serve with the turkey.
