Classic bread sauce

Simple, creamy and a must with turkey (or chicken if you like), this bread sauce recipe will complete your roast dinner.
- Serves 8
- Takes 10 minutes to make, 10 minutes to cook, plus infusing
Ingredients
- 1 onion, halved
- 6 cloves
- 600ml whole milk
- 5 black peppercorns
- 2 bay leaves
- 125g fresh white breadcrumbs
- Knob of butter
- Grated fresh nutmeg to taste
Method
- Stud the onion halves with the cloves and place in a medium saucepan with the milk, peppercorns and bay leaves. Bring to the boil, turn down the heat, then simmer gently for 5 minutes.
- Remove from the heat, then leave to infuse for an hour or so. Strain and discard the solids.
- Pour the infused milk back into the pan, beat in the breadcrumbs and half the butter and simmer gently for 5 minutes to thicken. Just before serving, beat in the rest of the butter, season, and grate in nutmeg to taste. Spoon into a bowl and serve with the turkey.
