Jersey royals with butter and herbs

Allow the fresh flavours of the jersey royals to shine through by preparing them simply, with butter and herbs.

Ingredients

  • 600g jersey royal potatoes
  • Lashings of butter (preferably from Jersey)
  • A generous handful of chopped fresh chives, flatleaf parsley and mint
  • Freshly ground black pepper and sea salt

Method

  1. Put the jersey royal potatoes into a large saucepan and cover with water. Put over a medium-high heat, bring to a rolling boil, then turn the heat down a little and leave the potatoes to bubble away for 10-15 minutes until tender (test with the point of a sharp knife).
  2. Drain, then stir through butter, the fresh chives, flatleaf parsley and mint. Season with the salt and pepper, then enjoy.
