This lemon vinaigrette works well drizzled over vegetable salads, such as broad beans and feta cheese, or beetroot.

Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 tbsp freshly-squeezed lemon juice

Method

  1. Whisk 3 tablespoons extra-virgin olive oil and 1 tablespoon freshly-squeezed lemon juice with a little seasoning.
