Mascarpone and fig almond biscuits

Fig and mascarpone are a match made in heaven. This easy recipe could be an elegant dessert canapé, although they’re also delicious with a cup of strong coffee.
For something a little more challenging, try these delicate fig and pistachio friands.
- Serves 2
- Ready in 10 minutes
Ingredients
- 2 drops vanilla extract
- 2 tbsp mascarpone
- 2 almond thin biscuits
- 2 ripe figs, cut into 4 lengthways, without cutting all the way through (or cut 1 fig in half for a more modest serving)
- Honey, to drizzle
Method
- Stir the vanilla extract into the mascarpone. Spread a generous layer on top of each biscuit and sit a fig on top. Top each with a little drizzle of honey. Tuck into them straightaway or the biscuits will soften.
- Best served with the iced mocha latte.
