A great take on a traditional potato salad.
Ingredients
- 500g new potatoes
- 3 tbsp olive oil
- ½ tsp Dijon mustard
- 1 tbsp chopped fresh chives
- 8 cooked baby beetroot, quartered
- ½ red onion, sliced
- 1 tbsp pumpkin seeds
Method
- 1. Cook the new potatoes, halved, in a pan of boiling water until tender.
- 2. Drain and mix with a dressing made of olive oil, Dijon mustard and chopped fresh chives. Season. Cool slightly, then add baby beetroot, red onion and pumpkin seeds. Serve.
Wine Recommendation
Pink is best this time, especially a bright Spanish rosado.
