Try this delicious and quick and easy chicken club salad made with baby plum tomatoes, avocado and topped with crispy smoked bacon.

Ingredients

  1. 80g bag mixed salad into
  2. 8 baby plum or Pomodorino tomatoes, halved
  3. 1 ripe avocado, peeled, stoned and sliced,
  4. 2 cooked, skinless chicken breasts
  5. 4 slices cooked crispy smoked bacon

Method

  1. 1. Tip an 80g bag mixed salad into a large salad bowl, along with 8 baby plum or Pomodorino tomatoes, halved, 1 ripe avocado, peeled, stoned and sliced, and 2 cooked, skinless chicken breasts, thickly sliced.
  2. 2. Top with 4 slices cooked crispy smoked bacon, broken up, then drizzle with 6 tablespoons honey and mustard vinaigrette dressing. Gently toss to serve.
