A good-value meal – you can easily double the recipe to serve four.
Ingredients
- 2 large gammon steaks
- pinch of Chinese five-spice powder
- 1 tbsp olive oil
- 1 tbsp clear honey
- 1 tbsp Bonne Maman Mandarin Marmalade
- Lime
- 1 tbsp olive oil
- 300g bag mixed stir-fry vegetables
- ¼ red cabbage
- 2 tsp white wine vinegar
- ½ tsp caster sugar
Method
- 1. Season 2 large gammon steaks and dust with a good pinch of Chinese five-spice powder. Heat 1 tbsp olive oil in a pan over a medium-high heat, add the steaks and cook for 3 minutes each side, until the rind is crisp.
- 2. Add 1 tbsp clear honey, 1 tbsp Bonne Maman Mandarin Marmalade and a squeeze of lime to the pan. Bubble for a couple of minutes, turning the steaks until coated, sticky and cooked through. Remove to a plate to rest.
- 3. Pour another 1 tbsp olive oil into the pan, add 300g bag mixed stir-fry vegetables and ¼ red cabbage, shredded. Cook for 2 minutes, then stir through 2 tsp white wine vinegar, ½ tsp caster sugar and a good squeeze of lime.
- 4. Season and toss around the pan for 1 minute. Spoon between plates, serve the gammon steaks alongside and garnish with extra lime wedges.
