Sweet and sticky gammon with stir-fry vegetables recipe

Sweet and sticky gammon with stir-fry vegetables

Ingredients

  1. 2 large gammon steaks
  2. pinch of Chinese five-spice powder
  3. 1 tbsp olive oil
  4. 1 tbsp clear honey
  5. 1 tbsp Bonne Maman Mandarin Marmalade
  6. Lime
  7. 1 tbsp olive oil
  8. 300g bag mixed stir-fry vegetables
  9. ¼ red cabbage
  10. 2 tsp white wine vinegar
  11. ½ tsp caster sugar

Method

  1. 1. Season 2 large gammon steaks and dust with a good pinch of Chinese five-spice powder. Heat 1 tbsp olive oil in a pan over a medium-high heat, add the steaks and cook for 3 minutes each side, until the rind is crisp.
  2. 2. Add 1 tbsp clear honey, 1 tbsp Bonne Maman Mandarin Marmalade and a squeeze of lime to the pan. Bubble for a couple of minutes, turning the steaks until coated, sticky and cooked through. Remove to a plate to rest.
  3. 3. Pour another 1 tbsp olive oil into the pan, add 300g bag mixed stir-fry vegetables and ¼ red cabbage, shredded. Cook for 2 minutes, then stir through 2 tsp white wine vinegar, ½ tsp caster sugar and a good squeeze of lime.
  4. 4. Season and toss around the pan for 1 minute. Spoon between plates, serve the gammon steaks alongside and garnish with extra lime wedges.
