Often used in Middle Eastern cooking, tahini is made from toasted ground sesame. Use up leftovers of this versatile condiment in dishes other than houmous.

How to use up leftover tahini

  • Tangy dressing. Combine tahini, olive oil, lemon juice, a little cayenne pepper and some chopped fresh parsley in a large bowl. Loosen with a little water and season well, then toss through a green salad or crunchy veg to make a slaw.
  • Posh sarnie. Cut a bagel in half, then toast. Spread the bottom half with butter, a little tahini and pesto, then top with salami, rocket leaves, a squeeze of lemon juice and a drizzle of extra-virgin olive oil. Replace the bagel top.
  • Middle Eastern dip. Mix tahini with natural yogurt, extra-virgin olive oil and lemon juice, then season well. Stir in chopped fresh coriander and serve with falafel or toasted pitta with pickled red onion.
