Ingredients
- 1 cantaloupe melon, deseeded and chopped
- 2 tbsp caster sugar
- Juice 2 lemons
- Mint leaves to flavour and garnish

Method
- Put the melon, sugar, lemon juice and around 5 mint leaves in a blender. Whizz until smooth. Give it a taste; how minty you like it will be down to personal preference, but you still want the flavour of the melon to lead things. Add a few more mint leaves if you like.
- Transfer the mixture to a shallow freezer-proof container, then freeze until solid. Once solid, scrape the mixture with a fork to create the granita (or break up the block and pulse a few times in a blender). Serve garnished with a mint leaf.
