Shiitakes have an earthy umami taste with a hint of smokiness. They always look beautiful, whether small and frilly or big and smooth. They stay firm when cooked, giving the perfect amount of bite. You can flash-fry them on a high heat, or they’re robust enough to hold their own in a broth, pie filling or tart.
