Porcini mushroom recipes
The mighty porcini, also known as a cep or penny bun. They’re pricy, but for your money you’ll get a meaty yet velvety texture as well as a rich and earthy flavour. Too fussy to be farmed, porcini mushrooms only grow wild – brush off any dirt rather than use water. Dried porcini are available in shops and online year-round of course, just remember that the flavour of dried is always much more intense when using.
