Air fryer choc chip cookies

These easy air fryer chocolate chip cookies by Katy Greenwood can be baked in under 30 minutes – the challenge is waiting for them to cool before you dig in! The recipe has been thoroughly tested in an air fryer to make sure it delivers the best results.
- Air fryer hack: “I’ve found that the best method for cooking biscuits and cookies in the air fryer is to remove the rack and bake them on a piece of baking paper placed on the base of the air fryer basket,” says Katy.
- Make ahead: “You can bake them in batches, or do what I often do, which is to keep the cookie dough balls in the refrigerator for up to five days, so I can have them warm from the air fryer on demand.”
- Classic cookie flavour: the combination of light brown soft sugar and caster sugar delivers classic rich, chewy cookies. The recipe uses dark chocolate chips for an indulgent, grown-up flavour – but swap in white or milk chocolate as you like. You could also try chopping up your favourite chocolate bars and mixing into the dough.

Ingredients
- 100g unsalted butter
- 100g light brown soft sugar
- 100g caster sugar
- 1 medium egg
- 300g self-raising flour
- 1 tsp bicarbonate of soda
- 100g dark chocolate chips
Method
- Add the butter to a large bowl and beat until soft, then add both sugars and cream together until light and fluffy. Beat in the egg, then add the flour, bicarbonate of soda and a pinch of salt and beat together. When the mixture resembles breadcrumbs, add the chocolate chips, then bring the mixture together with your hands.
- Roll the mixture into 16 balls, about the size of golf balls and press them down lightly with your palm to form a thick disc.
- Heat the air fryer to 160°C. Once hot, carefully place a sheet of baking paper, cut to fit your air fryer, onto the base of the basket (remove the rack) and add the cookies in batches. You will need to leave space around them to expand slightly, so how many you add will depend on your air fryer. I put five in mine.
- Bake for 10–12 minutes, then turn the air fryer off but leave the cookies in there for another 10 minutes, or until the cookies are firm and can be picked up (take care as the molten chocolate may still be hot!). Transfer to a wire rack and leave to cool completely.
