How to use up leftover wholegrain mustard

  • Everyday dressing
    Whisk 1 tbsp wholegrain mustard with 1/2 tbsp clear honey and the zest and juice of 1 lemon in a small bowl. Season well. Gradually whisk in 4 tbsp extra-virgin olive oil until thick.
  • Welsh rarebit
    In a blender, whizz 150g strong cheddar pieces, 1 tbsp wholegrain mustard, 1/2 tbsp Worcestershire sauce, 2 medium free-range egg yolks and 60ml stout to a smooth paste. Lightly toast 4 slices of sourdough bread. Heat the grill to high. Divide the rarebit evenly among the toasts, spreading it out to the edges. Put the toasts on a baking sheet and grill until the rarebit is golden and bubbling.
