A healthy and easy sandwich recipe to make for kids' packed lunches.
Ingredients
- ½ ripe avocado
- Lemon juice
- 2 slices bread
- ¼ red pepper
Method
- Mash ½ ripe avocado with a little lemon juice, and spread onto your chosen bread. Finely chop ¼ pepper (orange, yellow and red are sweeter than green) and sprinkle over the avocado. Or, use a chopped roasted red pepper from a jar.
