A healthy and easy sandwich recipe to make for kids' packed lunches.

Avocado and red pepper sandwiches

Ingredients

  1. ½ ripe avocado
  2. Lemon juice
  3. 2 slices bread
  4. ¼ red pepper

Method

  1. Mash ½ ripe avocado with a little lemon juice, and spread onto your chosen bread. Finely chop ¼ pepper (orange, yellow and red are sweeter than green) and sprinkle over the avocado. Or, use a chopped roasted red pepper from a jar.
