Honey-nut bananas recipe

This delicious concoction of honey, nuts and fruit is amazing on its own or with pancakes.

Honey-nut bananas

Ingredients

  1. 40g butter
  2. 3-4 tbsp honey
  3. 4 bananas, sliced half lengthways
  4. A good splash of rum
  5. Chopped pecans and ice cream, to serve

Method

  1. 1. Melt butter with honey in a heavy-based frying pan and cook until just beginning to brown.
  2. 2. Place the bananas in the pan. Cook for 3-4 minutes, turning occasionally, until caramelised.
  3. 3. Add a good splash of rum to the pan and allow to evaporate, then sprinkle with chopped pecans and serve with ice cream.
