This is an easy Meditteranean-style dish with rice and tomato pasta sauce. Although you start to cook this on the hob, it then goes into the oven so you don't have to stand and stir for ages. It emerges as a warming, hearty and tasty meal.
Ingredients
- 400g can tuna in oil
- 1 chopped onion
- 12 chopped rashers of smoked streaky bacon
- 200g long-grain rice
- 290g jar tomato and herb pasta sauce
- Handful of finely chopped basil leaves (optional)
Method
- 1. Preheat the oven to 180C/fan160C/gas 4. Drain half the oil from tuna into a flameproof casserole. Discard the rest of the oil. Add onion and bacon. Cook over a medium heat for 8 minutes, stirring, until the onion is turning golden.
- 2. Stir in rice, cook for 1 minute, then stir in pasta sauce. Add the drained tuna, pour over 500ml boiling water from the kettle and season with black pepper. Stir gently, cover and bake for 30 minutes, until the rice is tender. Scatter with some finely sliced basil leaves to serve, if you like.
