This simple veggie gravy is such a good tip for vegetarians.
Ingredients
- 2 tbsp olive oil
- any vegetable trimmings (from your main meal or side dish)
- 1/2 tsp salt
- 1/4 tsp sugar
- 11/2 tbsp flour
- 11/2 tbsp soy sauce
- 450ml boiling water
Method
- 1. Heat olive oil in a roasting tin on the hob. Stir in any vegetable trimmings (from your main meal or side dish), salt and sugar.
- 2. Transfer to the oven and roast for 20 minutes. Put back on the hob over a medium heat. Stir in flour, cook for 1 minute then add soy sauce and just-boiled water.
- 3. Simmer for 5 minutes, or until thickened slightly. Season, strain and serve.
