Jan and Anja Baak, a Dutch couple, are the brains behind Great Glen Charcuterie. They moved to Scotland to work in estate management, then became game dealers before developing their charcuterie business. Jan and Anja support wild red deer management in the Highlands, a big part of the rural economy, and aim to add value to this sustainable meat while bringing it to a wider market.

 

Naturally lean, venison is great for charcuterie. The Baak’s extensive range is all produced by hand. They say, “We are really connected to the landscape and the customer can get a little taste of this by purchasing our products.”
