- Why it’s so good: This simple summer crumble reimagines the delightfully retro flavours of everyone’s favourite gateau. Serve with a scoop of creamy vanilla ice cream for black forest perfection.
- Cooking hack: If you don’t have a cherry pitter, you can use the thin end of a chopstick to push the stones out of the cherries. Or if you find that tricky, you can halve the cherries and scoop the pits out with your fingers or a teaspoon.

Ingredients
- 80g unsalted butter, chilled and chopped
- 100g self-raising flour
- 30g light brown soft sugar, plus 2 tbsp
- 30g cocoa powder
- 30g blanched hazelnuts, roughly chopped
- 30g cocoa nibs
- 6 Oreos or similar chocolate biscuits, roughly crushed
- 20g dark chocolate chips (70% cocoa solids)
- 700g cherries, pitted (see Know-how)
- 2 tbsp hazelnut liqueur or cherry brandy (optional)
- Stracciatella or vanilla ice cream to serve

- 1.5-2 litre baking dish (about 15cm x 25cm)

Method
- Heat the oven to 200°C/180°C fan/gas 6. Rub the butter into the flour in a large bowl until it resembles chunky breadcrumbs.
- Stir in the 30g sugar, the cocoa powder and a pinch of salt, then mix in the hazelnuts, cocoa nibs, crushed biscuits and half the chocolate chips.
- Put the cherries, 2 tbsp sugar, the liqueur (if using) and a pinch of salt in the baking dish. Mix together, then spread evenly.
- Top with the crumble mix and scatter over the remaining choc chips, then cook for 30-35 minutes until darker and crisp on top. Serve with plenty of ice cream.
