Treat your Boxing Day sandwich to an air-fryer upgrade in this easy recipe. When making toasties in the air fryer, think of them as a stack of ingredients rather than fillings encased in bread. Everything cooks at the same time (compare this to when the heat comes from below: you need to flip the toastie and wait for the centre to warm through), so if cheese, turkey or sprouts are exposed, they’ll get a nice crisp caramelisation too.
Cooking a toastie in the air fryer ensures an even crispness and, as the heat is coming from all directions, you don’t need to squish it down – which means you can stuff it with more fillings! This is an endlessly versatile base to work with; the cheese and bread sauce provide the necessary glue to hold together whatever leftovers you have.

Ingredients
- 60g comté cheese, coarsely grated
- 4 tbsp leftover bread sauce
- Splash whole milk
- Unsalted butter to spread
- 4 slices bread
- 3 tbsp cranberry sauce
- About 150g leftover turkey, torn into chunks
- Small handful leftover brussels sprouts, halved
Method
- Stir together the comté, bread sauce and a splash of milk in a medium bowl.
- Butter both sides of each slice of bread. Spread the cranberry sauce over 2 of the slices, then top with the turkey and season with salt and pepper. Add the sprouts, spread the cheese mixture on the other slices, then sandwich them together.
- Heat the air fryer to 190°C. Cook the toasties for 10-12 minutes, carefully turning halfway through, until golden and crisp on the outside and gooey in the centre. Slice in half and serve.
