Christmas leftovers turkey toastie

Treat your Boxing Day sandwich to an air-fryer upgrade in this easy recipe. When making toasties in the air fryer, think of them as a stack of ingredients rather than fillings encased in bread. Ingredients

  • 60g comté cheese, coarsely grated
  • 4 tbsp leftover bread sauce
  • Splash whole milk
  • Unsalted butter to spread
  • 4 slices bread
  • 3 tbsp cranberry sauce
  • About 150g leftover turkey, torn into chunks
  • Small handful leftover brussels sprouts, halved

Method

  1. Stir together the comté, bread sauce and a splash of milk in a medium bowl.
  2. Butter both sides of each slice of bread. Spread the cranberry sauce over 2 of the slices, then top with the turkey and season with salt and pepper. Add the sprouts, spread the cheese mixture on the other slices, then sandwich them together.
  3. Heat the air fryer to 190°C. Cook the toasties for 10-12 minutes, carefully turning halfway through, until golden and crisp on the outside and gooey in the centre. Slice in half and serve.
