Dirty blueberry soda

The jammy flavour of blueberries gets cooked down into a tart syrup, ready to be topped up with soda water and ‘dirtied’ with a splash of cream.
Ingredients
- 150g blueberries (frozen or fresh), plus extra to garnish (optional)
- 25g caster sugar
- Soda water to top up
- 25ml single cream
Method
- Put the blueberries in a saucepan over a medium heat and pour in enough water to cover. Bring to a gentle simmer and cook for 10 minutes.
- Line a sieve with muslin or kitchen paper, then set over a jug or bowl. Pour the contents of the pan into the sieve. Leave until the liquid stops dripping into the bowl.
- Gather up the muslin or paper and give it a squeeze to extract any remaining liquid from the solids. Pour the liquid back into the pan, add the sugar and simmer briefly (1-2 minutes) until the sugar has dissolved. Leave to cool.
- Decant the syrup into a bottle or container and keep in the fridge until needed (see Make Ahead).
- To make the dirty soda, fill a tall glass with crushed ice and a few blueberries, if you like. Add 25ml of the syrup, then top up with soda water. Splash in the cream and enjoy.
