Homemade cream soda

Cream soda often gets lumped in with the flavoured fizzy drinks of yesteryear (joining the likes of dandelion and burdock). We think it’s time to give it the spotlight! Flavoured with vanilla, this homemade version is a real treat, offering an intense vanilla flavour which brings a ‘creaminess’ to soda water.
Ingredients
- 200g caster sugar
- 1 vanilla bean
- Soda water, as needed
Method
- Put the sugar and 200ml water in a saucepan. Split open the vanilla pod, scrape the seeds into the pan, then add the pod too. Put over a medium heat and bring to a gentle simmer. Cook for 10 minutes.
- Leave the syrup to cool, then decant into a container (leave the pod in, as it will continue to flavour the syrup). Keep in the fridge until needed (see Make Ahead).
- To make the cream soda, add 50ml of the syrup to a tall glass filled with ice. Pour in the soda water. Give it a brief stir and enjoy.
