Ingredients

  • 700ml gin
  • 100-150ml dry vermouth (depending on how dry or sweet you want it)
  • ¼ tsp fine salt
  • Cocktail onions to garnish, plus 10ml of their brine (optional)
  • Samphire or bay leaves to garnish (optional)

Method

  1. Mix the gin, vermouth and pickle brine with 200ml water in a freezerproof bottle or container. Keep in the freezer until ready to serve or decant into bottles for gifting (with instructions to keep it in the freezer).
  2. To serve, give the bottle a shake, then pour into a martini glass (ideally chilled). Garnish with cocktails onions and sprigs of samphire or bay leaf.
