Make-ahead ‘mistletoe’ martini for a crowd

Having a pre-mixed martini on hand in the freezer, ready to go at a moment’s notice, makes cocktail hour dangerously effortless. A festive mistletoe-like garnish of samphire (or bay) and cocktail onions adds a pleasing savouriness for when it’s time to serve.

Ingredients
- 700ml gin
- 100-150ml dry vermouth (depending on how dry or sweet you want it)
- ¼ tsp fine salt
- Cocktail onions to garnish, plus 10ml of their brine (optional)
- Samphire or bay leaves to garnish (optional)
Method
- Mix the gin, vermouth and pickle brine with 200ml water in a freezerproof bottle or container. Keep in the freezer until ready to serve or decant into bottles for gifting (with instructions to keep it in the freezer).
- To serve, give the bottle a shake, then pour into a martini glass (ideally chilled). Garnish with cocktails onions and sprigs of samphire or bay leaf.
