Nut butters

Peanut butter is a storecupboard staple, but you can make your own nut butter from any nuts (hazelnuts, brazil nuts, cashews…) – a single variety or in combination.
- Makes 500g

Ingredients
- 500g nuts
- 1tbsp vegetable oil
- ½ tsp salt, or to taste
- 1 tbsp honey (optional)
Method
- Toast the nuts first for the best flavour. Spread them on a roasting tray and cook in a 150°C oven for 10 minutes until golden brown. Rub off any flaky skin.
- Whizz the toasted nuts in a food processor for 10-12 minutes, stopping to scrape down the sides occasionally, until the nuts release their oils and turn into a smooth paste. If, after that time, they still need a little help, add a splash of vegetable oil and whizz again. If your machine starts to get too hot, switch it off and let it cool down before starting again.
- Season the butter with a few pinches of salt and whizz again. You can vary the flavour by adding different spices or sweetening the mix with honey.
- Decant into sterilised jars. Store in the fridge and use within 2 weeks.
