The Easter showstopper

Baklava dome cake
Save room after the big roast for this spectacular bake. Our baklava dome cake features layers of rosewater and cinnamon sponge cake, raspberry cream, raspberry jam and pistachio icing. The dome is covered in gorgeous pistachio frosting and finished with piped decorations and edible rose petals. It’s unapologetically OTT, but surprisingly easy to assemble.

 

The chocolate cake

It wouldn’t be Easter without chocolate. After the morning egg hunt has whet everyone’s appetite, dish up this delightful chocolate cake as an afternoon treat. There’s something for every chocolate lover in Great British Bake Off star Martha Collison’s recipe: white chocolate sponge, dark chocolate buttercream and a big nest of mini eggs on top. We’ve used kataifi pastry (a star ingredient in trendy Dubai chocolate) to create the nest, but shredded wheat also works.

 

The carrot cake

Cheesecake meets carrot cake in this impressive recipe. Cut through the thick blanket of cream cheese frosting to reveal four layers of fragrant carrot sponge cake and bonus stripe of marbled chocolate cheesecake. Top with edible spring flowers for a simple but stunning finish.

 

The traditional cake

Simnel cake
There’s still time to bake a simple simnel cake for Easter. This rich fruit cake is topped with a layer of marzipan and 11 marzipan balls. Each represents one of Jesus’s apostles, with the exception of Judas (who betrayed him). Original Bake Off champion Edd Kimber’s recipe is a classic; use a kitchen blowtorch to gently brown the marzipan for the traditional burnished finish. Serve with a big pot of tea.

These cute bakes are perfect if you fancy a spot of family baking over the long weekend. Decorate the classic vanilla cupcakes with a swirl of vanilla frosting and then get creative with the decorations. We’ve gone with shredded wheat nests, halved Creme Eggs and mini eggs (remember that mini eggs aren’t suitable for children aged 4 and under, though).
