Ham with a peach and coucous salad recipe

Couscous is such a versatile food, and mixes well with ham and a peach for this exotic-looking tasty salad.

Ham with a peach and coucous salad

Ingredients

  1. 75g couscous
  2. knob of fresh ginger, finely grated
  3. 2 ripe peaches
  4. ½ cucumber
  5. 4 sliced spring onions
  6. Handful of chopped fresh mint
  7. 2-3 slices of cooked ham

Method

  1. 1. Put couscous into a bowl and add fresh ginger. Pour over 75ml boiling water and set aside for 5 minutes.
  2. 2. Meanwhile, stone and cut peaches into thin wedges and put into a bowl. Cut cucumber in half lengthways and scoop out and discard the seeds. Cut into dice and mix with the peaches. Add spring onions and chopped fresh mint.
  3. 3. Loosen up the couscous and stir in the peach mixture just before serving. Check the seasoning.
  4. 4. Divide the couscous salad between 2 plates, then add 2-3 slices of cooked ham to serve.
